Job Description

Poulet Rouge is growing, and we’re looking for motivated people to grow with us. We’re passionate about great food, warm service, and making a difference in our communities. Here, you’ll join a team that supports each other, welcomes initiative, and gives you opportunities to learn and make your mark.

As Academy Manager, you’ll put that team spirit into action. You’ll lead a restaurant that sets the example for our network while helping future franchisees and operators develop the confidence and skills to succeed.

Our Culture, Our Strength

Our values guide how we work and lead every day:

    • Serving with humility: Listen, support your team, and help others succeed.
    • Being real: Lead honestly, communicate openly, and build trust.
    • Pursuing excellence: Take ownership, keep learning, and raise the bar together.

The Academy Manager leads the daily operations of a Poulet Rouge restaurant that also serves as a training centre for future franchisees and operators.

You will balance restaurant performance, team development, and practical training, ensuring the Academy sets the example for our growing network. Through hands-on leadership and coaching, you will help future franchisees build the skills, confidence, and autonomy to lead their own restaurants while bringing our culture to life.

Your Responsibilities

  • Lead an exemplary restaurant
    • Oversee daily operations, including opening and closing procedures, service, cash handling, and restaurant readiness.
    • Manage labour costs, inventory, expenses, and scheduling to support profitability and operational efficiency.
    • Maintain high standards of food quality, service, hygiene, sanitation, and workplace safety.
    • Monitor operational results, audits, guest feedback, and delivery platform performance, and implement improvement plans.
    • Coordinate equipment maintenance and upkeep to ensure a clean, welcoming, and well-maintained restaurant.
    Build and develop your team
    • Recruit, onboard, train, schedule, and supervise the Academy’s restaurant team.
    • Coach employees, provide clear feedback, and create an environment where people feel supported and accountable.
    • Model our values through everyday decisions, teamwork, and guest interactions.
    Prepare future franchisees and operators
    • Coordinate training schedules with Academy leadership and trainers.
    • Guide franchise candidates through practical restaurant training, demonstrating best practices and correcting gaps.
    • Monitor and document candidate progress, complete evaluations, and communicate development needs and action plans.
    • Develop candidates’ leadership, judgment, and autonomy, helping them understand both how to operate a restaurant and how to lead a team.
    • Share feedback with Academy leadership to improve training delivery and operational practices.

Are You Our Ideal Candidate?

  • You bring 3–5 years of operations management experience, ideally in a restaurant, franchise, or quick-service environment.
  • You have experience managing restaurant performance, including labour, inventory, service, and quality standards.
  • You enjoy teaching and coaching, and can turn operational knowledge into clear, practical guidance.
  • You lead with humility, communicate openly, and hold yourself and others accountable.
  • You are organized, adaptable, and comfortable balancing restaurant operations with training priorities.
  • You hold a high school diploma, food safety and hygiene manager certification, and workplace first aid certification.
  • You are comfortable using restaurant and collaboration tools such as MYR, Cluster, Google Workspace, ClickUp, Uber Eats, and UEat.
  • You communicate effectively in English to support employees and franchise candidates.
  • You are available to work on-site, with schedule flexibility based on restaurant and training needs.
